Grape varieties : Chenin Blanc

Origin : Loire - Anjou

Vinification : Several very meticulous "tris" in the vines, in order to obtain the optimal concentration in the berries. The ideal harvest is made of 50% botrytis and 50% raisining. Then the bunches are sorted out again on tables. After a long press (up to 8 hours), traditional vinification, maturing in 400-litre oak barrels for 10 to 15 months. Nose : Slightly smoky, jammy, aromas of apricot and linden-tree

Palate : Suave, slightly spicy. The attack is clean and lively. Finally, the freshness and harmony are balanced by the mellow woody taste.

Recommendations : As an aperitive, with blue cheese or with foie gras
