This Domaine covers 30 hectares of vineyards near Tavel and has been organic for more than 10 years. It gained biodynamic status from the 2012 vintage. Owned by the Leperchois family, the Domaine derives its name from its role as a coaching inn and the original cellars were developed in the old stables.
Organic and biodynamic certified.
The grapes are harvested at night to avoid oxidation and to restrict the use of SO2. Fermentation is controlled at 28C to maintain maximum fruit aromas. Natural yeasts are used to start the fermentation.
At 16-18C with roast or grilled red meats and cheese.
Grenache Noir 50%, Syrah 25%, Mourvèdre 15%, Cinsault 10%
