Tasting Note

Complex aromas of exotic fruits, mango and passionfruit combine with citrus zest and a hint of smoke. A beautifully structured Sancerre, with a dense, fleshy palate and refreshing flavours of exotic fruits and citrus zest echoing the nose, enveloped by distinctive mineral overtones. Long and aromatic on the finish.

Producer Note

This Sancerre domain has been passed down through the generations of the Cherrier family since 1848 and the name Domaine de la Rossignole was given in honour of one of the ancestral parcels. Since 1994, the estate has been run by François and Jean-Marie Cherrier, who passionately believe in a philosophy of minimal intervention in the vineyard and winery, allowing the wines to fully express the terroir. The result is a stunning Sancerre, which showcases all the classic hallmarks of this elegant house style.

Vineyard

The vineyard is located in the heart of the Sancerre appellation and the soil is a blend of the three main soils which are typical of the region: clayey-siliceous, silex and clayey-chalk. Biodynamic techniques are employed in the vineyard. The vines are cultivated as naturally as possible, with ploughing, hoeing and short pruning. The environment is respected when protecting the vineyard against disease. The vineyard is managed taking care to consume the least amount of energy as possible.

Winemaking

The grapes were pressed within two hours of being picked, in order to retain freshness. The must was settled over 24 hours, separating the juice from the solids. After a racking, the must was transferred to stainless steel tanks, where it underwent fermentation at controlled temperatures of between 19°C and 20°C. The wine was racked and matured on its fine lees to add texture and complexity, before being cold stabilised, filtered and bottled.

Delicious with seafood, grilled fish with delicate sauces, Japanese cuisine and goat's cheese.
