Grape varieties : 100% Picpoul
Origin : The vineyard is located on a limestone plateau with stony red clay, at an average altitude of 100 metres, overlooking the Etang de Thau and the Mediterranean.
Vinification : The grapes are harvested by night when they are fully ripe, so as to protect their aromas and keep the fruit as whole as possible. The juice is protected from oxygen and pressed selectively upon arrival at the winery, then fermented at a regulated temperature.
Soil : Limestone plateau with stony red clay
Colour : It has a light robe with green highlights.
Nose : Its bouquet is fresh with notes of lemon and grapefruit.
Palate : It is ample and crunchy on the palate.
Recommendations : Best served within 18 months of harvesting, at 8°C. Enjoy on its own or with fish and seafood.
