Producer Note

Named ‘Winery of the Year’ by James Halliday and Matt Skinner, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in paying meticulous attention to the vineyard, canopy and water management, picking at the right time and minimal intervention in the winery. Larry also makes wine under the Laissez Faire label, an exquisite range of natural wines which are the ultimate expression of site, made in small batches from hand harvested grapes. From delicate whites to opulent reds, all his wines have pure class and finesse.

Vineyard

The Pedestal vineyard is situated right at the highest point of the Wilyabrup Valley, influenced by the cooling ocean breezes. The soils in the northern part of Margaret River are iron-rich laterite loams with a high gravel content, which drain freely and warm up quickly in the spring. Due the south facing slopes, the vineyard does not see the afternoon heat and therefore it takes longer for the fruit to develop, concentrating the varietal characteristics and flavours.

Winemaking

The Semillon and Sauvignon Blanc parcels were picked at maximum flavour maturity over several weeks, to ensure that all the various soil types and aspects of the vineyard were fully exploited. A combination of machine and hand harvesting was employed. Only the free run parcels were used after a gentle pressing. 60% of the juice was fermented in two year old oak, for two months.

Tasting Note

A fragrant lavender aroma coupled with leafy, herbal spiciness from the oak. Straw and cut-grass from the Sauvignon Blanc balance this wine beautifully with gently tropical fruits providing enough acidity to cleanse and draw out the finish. The palate is soft and plush, with long acidity and a strong finish.
