Grape varieties :

Syrah, Grenache Noir & Mourvèdre

Origin :

South of France - Languedoc Roussillon

Vinification :

Harvesting is done at optimum maturity. The grapes are de-stemmed, crushed and then placed in vats. The vatting, during which the alcoholic fermentation takes place, lasts approximately 4 weeks. During this, gentle extraction operations (punching down, pumping over) are carried out, in order to extract all the organoleptic potential of the wine (aromas, colour, tannins). Each grape variety is vinified separately. They are blended later, then aged in vats for a year.

Soil :

The terroirs are composed of limestone shards on ancient soils, in a wild and natural environment bordered by scrubland. The climate is relatively cool, thanks to the proximity of the Pic Saint Loup circus which locks in the cold winds from the Massif Central.

Colour :

Very intense red colour with purple reflections.

Nose :

On the nose, aromas of blackcurrant and dark chocolate mingle together.

Palate :

The palate combines richness and silky tannins. It is a fresh and mineral red wine which perfectly expresses the stony terroir from which it comes.

Recommendations :

To be enjoyed with red and grilled meats, game or mature cheeses.
