Producer Note

Bollinger is one of the last remaining independent Champagne houses. Family-managed since 1889, Bollinger maintains 164 hectares of vineyard most of which are classified Grand or Premier Cru. Pinot Noir predominates and forms the backbone of the Bollinger style distinguished by elegance and complexity dating back to 1829. The House lets its wines mature for twice as long as the appellation requirement. This is not out of vanity, but because a great wine needs the luxury of time to develop its full character.

Winemaking

Before being blended the wines are fermented separating each cru and grape variety, in 100 or 120 hl stainless steel tanks. This improves the control of the fermentation process, and enhances the quality of the wines used for blending the Special Cuvée. In certain years, wines fermented in barrels will be used in the final blend.

Tasting Note

Left to mature on the lees for three years, this is a full-flavoured, classic Champagne made mainly from Grands and Premier Cru areas with the addition of 5% to 10% of their unique reserve wines.

Serving Suggestion

Pair with all fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish and grilled lobster, poultry and white meat, cashews, parmesan or prosciutto.
