Lifted aromas of crushed basil leaf and a hint of floral honeysuckle, lead to an explosion of zingy citrus blossom, nettle and pineapple. The long finish is clean and crisp and leaves you wanting more. Perfect accompaniment to salmon or trout dishes, tomato and mozzarella salad, asparagus and goats cheese. Vegan friendly.
About
Made by director/winemaker Simon Day who grew up on an English vineyard and has 25 years’ experience making wine in England and abroad. Simon is a viticultural consultant, he has recently established the first UK based vine nursery. He is also an award-winning cider maker - the first to produce an ice cider in the UK and now innovative co-ferments.

Vines: Scott Henry trellis planted to density 1040 vines per acre
Soil type: Clay loam over Silurian Mudstone. Good drainage & aspect.
Harvest: Yield 4 tonne per acre

Stainless steel tanks, cool ferment (12- 15 Celsius), low intervention
