Designation: HAUT POITOU

Vintage : 2020

Grape varieties : SAUVIGNON BLANC

Origin : The vineyard of 700 ha is located in the north of Poitiers, in the departments of Vienne et Deux Sèvres.  The vines are planted in islets on the best soils and on hillsides to achieve the best exposure to the sun. It is an agricultural landscape of the Haut-Poitou where one finds "fiefs of vines" distributed in the large agricultural cultures. The climate of oceanic influence is a little drier and warmer than that found in the neighbouring vineyards of Anjou and Touraine.

Vinification : Harvested at aromatic maturity, the Sauvignon grapes are carefully pressed, protecting them as much as possible from oxygen. The already very aromatic musts, after settling, are put to ferment at low temperatures (14/16°C). At the end of fermentation, the wines are kept on their lees, and the lees are stirred regularly to promote yeast autolysis in order to add more weight and complexity to the wine during the winter.

Soil : Limestone soils.

Colour : Translucid, brilliant, with silver glints.

Nose : Nice aromatic expression of citrus, grapefruit, kiwi, white flowers and slightly minty.

Palate : Very well balanced, fresh, tonic, slightly peppery finale.

Recommendations : Ideal as an aperitif, or will perfectly accompany fish in a light sauce sauce and seafood. It will also be wonderful with fresh cheeses such as Chabichou du Poitou.

Serving condition in C° : 8-10°C
