While 2017 had a dry summer with lots of berries and not much juice, 2018 had enough occasional rain to fill the grapes with juice. The harvests took place under excellent conditions, delivering good quality crops and bringing 2018 in line with previous years; with the promise of a very good vintage.
The organic vines are grown using sustainable methods and have been awarded the Terra Vitis accreditation. As this wine is made without the addition of any sulphur or additives, the work undertaken in the vineyard is crucial. A precise and meticulous selection of the plots most suitable for producing this type of wine is undertaken. 90% of the final result depends on this painstaking work, as the vines must be in perfect health, with strong, fresh, dense foliage and selecting grapes which have reached optimal maturity. The window for successful harvesting of the fruit is very narrow, the balance between acidity and sweetness; and the maturity of the tannins are critical for this type of wine.
Made without the addition of sulphur or additives. The grapes were immediately pressed with a cold must settling, in order to encourage the oxide compounds in the must to stabilise naturally. A short alcoholic fermentation took place at controlled temperatures, which were restricted to 18°C. The wine was purified by racking, prior to malolactic fermentation. This was followed by further racking at controlled temperatures. The wine was bottled relatively early to preserve its full aromatic character.
