Tasting NoteThe aroma includes bright fruity damsons, plum and spices, balanced with the sweet and toasted notes of wood. The palate is soft with gently appealing blackcurrant on the palate, well structured tannins, leaving a persistent flavour including hints of cherry stones.Producer DetailsEmiliana is one of the world’s most important producers of Organic and Biodynamic wines. They have a total of 1,117 hectares under vine of which 750ha are IMO and Demeter certified organic. Their spectacular Biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world. Jose Guilsasti and Alvaro Espinosa (winemaking) were key to establishing this project but there is a wealth of young talent involved. These innovative wines are made with great care and attention and the results are inspiring. The flagship Coyam has already become one of Chiles iconic wines but the whole range excels.In The VineyardThe Central Valley goes from Maipo to the Maule Valley. This zone presents good draining and fertility, especially for red varieties like Cabernet Sauvignon and Carmenere. It has a Mediterranean climate, with hot summers characterized by having big temperature differences between day and night, and cold, rainy winters. This makes the grape grow well. The floor has an alluvial origin and its profoundness is ideal for agriculture.In The WineryThe grape was manually harvested at the end of April. After it was processed, there was a cold pre-fermentative period, at 8°C, for 5 to 7 days. Alcoholic fermentation remained with temperatures between 25°C to 28°C. After a post fermentative maceration, malolactic fermentation takes place naturally, with daily temperature controls.
