Designation : AOP CREMANT DE LIMOUX
Grape varieties : 60% Chardonnay, 30% Chenin, 10% Pinot Noir
Origin : The AOP Crémant de Limoux, established in 1990, is issued from the AOP Limoux and is located on the same designation area, 25 km from Carcassonne, along the high valley of the Aude, between the plateaux of Chalabrais and Lacamp.
Vinification : Whole grapes are pressed followed by a vinification at 18°C in thermo regulated vats. Ageing takes place in vats. The wine is bottled after blending, fining, and filtration and then rests on lees for 12 months.
Soil : Clay-limestone and oceanic.
Colour : Bright gold
Nose : Clear, with lemon and sweet-almond notes
On the Palate : Supple, very refreshing, well balanced with a mellow finish. The Chardonnay adds a creamy element to the wine.
Recommendations : Ideal as pre-dinner drink, with fish, seafood, or can accompany a entire meal.
Serving condition in C°: 6-8°C
