Château l'Ermitage was founded in the 11th Century by the hermits of Sainte Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. The importers have a close relationship with owner Jérôme Castillon and he has been instrumental in some of their own wines. Jérôme restricts the use of oak influence as much as possible and new oak is not used.
TASTING NOTE
Delicate and mineral with subtle notes of fleshy peach.
PRODUCTION
Made from predominantly pale-skinned Grenache Gris from 10 to 20 year-old vines, traditional southern "pressurage direct" is used to create a very pale rosé; grapes are pressed slowly and rather than a short maceration with skins as is usual in rosé, the juice is run-off without time in contact with the skins.
FOOD MATCH
Anchovies with sundried tomato paste and tapenade.
