2017 saw a cool spring with a late budburst. The fruit set was excellent, which was followed by a warm summer and ideal ripening conditions, resulting in even ripening and high natural acidity.
The vines are approximately 10 years old and are planted at the top of a hill at an altitude of 480 metres above sea level. It is a rocky site, which suits this very vigorous variety as the site has very little top soil, slowing down the vigour.
The grapes were de-stemmed and then underwent a cold soak for one week. Fermentation took place in stainless steel and lasted for two weeks. The wine was then transferred to old French oak barrels for a period of 12 months, adding subtle oak complexity. The wine saw no new oak and was bottled unfiltered.
Fresh and vibrant blue fruits are complemented by subtle notes of rosewater. With opulent flavours of ripe, juicy cherries, dark chocolate and a touch of Dutch cocoa; and fine supple tannins this is fabulous served slightly chilled.
Delicious served slightly chilled, try with a wild boar ragu or prosciutto pizza. This also accompanies tomato based foods or the spice and heat of an Indian curry.
