Producer Note
San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.
Vineyard
The Barbera vines are grown in marl clay and sand soils. This vigorous vine is carefully managed in the vineyards, in order to produce concentrated flavours.
Winemaking
The grapes were crushed and de-stemmed and then fermented in stainless steel tanks at a controlled temperature of 28 to 30°C. Fermentation was followed by a maceration on the skins, which lasted eight days with daily pumping over of the cap. Natural malolactic fermentation took place in the spring following the vintage, then the wine was left to rest in temperature controlled tanks for six months prior to being bottled.
Tasting Note
Bright cherry tones combine with aromas of wild raspberries. Soft on the palate but still with structure and finesse. A very approachable style of Barbera with excellent ripe fruit and a fresh finish.
Serving Suggestion
This approachable style of wine accompanies a variety of dishes, from cold meat platters, grilled red meats to simple pasta dishes.
