Tasting Note

A classic vintage with aromas of dried fruit, roses and tar. Expressive aromatics with lots of minerality and a very long finish. A wine that will age well.

Producer Note

Cantine San Silvestro is located in the territory of the Commune of Novello. It mainly produces the leading Piemontese DOC and DOCG red wines, with a storage capacity in a controlled microclimate of around 400,000 bottles with a total surface area of over 5,000 square metres. The grapes vinified by Cantine San Silvestro are mostly grown in the Langhe, and from vineyards to be found in the Roero and the Monferrato regions. Today, San Silvestro represents the continuation of a project begun by Giovanni Sartirano, and carried forward through four generations. Over the years, the firm - run today by cousins Paolo and Guido Sartirano - has gradually expanded beyond the local market, and now the production of "Cantine San Silvestro" is sold throughout Italy and abroad.

Winemaking

Following crushing and de-stemming; fermentation takes place in stainless steel tanks at a controlled temperatures of 28-30°C. Maceration on the skins for 12 days, with daily pumping of the must over the cap. Natural malolactic fermentation takes place in the spring following the harvest. The wine is aged for three years, two of which are spent in large oak barrels and one year in tank, followed by six months in bottle prior to release.

Serving Suggestion

This top-end Barolo has the intensity to accompany rich, red meat dishes, game and flavoursome stews. Wonderful with wild boar, venison, pheasant or guinea fowl in a truffle sauce. Also accompanies mature, strong cheeses such as Parmigiano Reggiano, Pecorino Vecchio, mature Cheddar and blue cheeses.
