Vinification

Machine harvesting (Mourvèdre, Syrah and some of the Grenache), and hand-harvesting of the Carignan and Grenache, vinification takes place with grape varieties kept separate. Grapes are de-stemmed and pressed, with a cold pre-fermentation for the Grenache and Syrah. Malolactic conversion takes place in vats with a stirring of the fine lees.  It is matured on the lees without SO2 during the winter.

Soil 

Pebbles on sandy clay ("Cresses") and white limestone/clay.

Tasting Note

A dark deep red with deep purple reflections. The bouquet has fine complexity with notes of red fruit, violet, liquorice and aromatic plants from the Mediterranean brush (thyme, rosemary).The palate is full and silky smooth marked by aromas of fruit (blackcurrant, blackberry), spiced up by grilled roasted notes with powerful, smooth tannins and a finish full of finesse enhanced by spicy notes.
