Sebastien Bidault makes the wines from this new Domaine comprising 11 hectares owned by his wife Anne’s parents in both Côtes de Nuits and Beaune. Great attention is given to the quality of the grapes in the vineyards which are farmed organically.
The vines are cultivated according to “la lutte raisonnée”, using sustainable agricultural methods and reducing the amount of chemicals, in order to respect the land and its environment. Pesticides and herbicides are not used in the cultivation of the vines; instead, a regular tilling of the soil is performed to remove weeds. The soils are made up of chalk and clay and impart a finesse and elegance to the resulting wines. The grapes are harvested by hand at optimum maturity.
The grapes were sorted and de-stemmed and underwent a cold pre-fermentation maceration for four to five days. Alcoholic fermentation lasted approximately 18 days. The wine was pressed and then aged in barrel for 12 months which added complexity. Fining and a light filtration took place prior to bottling.
Well textured and quite weighty Burgundy with concentrated aromas of red and black fruits underpinned by hints of cloves. Beautifully balanced tannins on the palate are enveloped by a lovely freshness of Pinot Noir fruit.
The depth of character in this wine makes it a great accompaniment to fillet of beef or game dishes.
