Pol Roger is one of the few remaining great family-owned Champagne houses. Rich Demi Sec is composed of wines taken only from the cuvée (the first, light pressing) and, where appropriate, the taille (second pressing) which provides a higher proportion of essential tannins; the wines from the subsequent pressings are not used. Though 'demi-sec' translates as medium-dry, the style is far from cloying. The blend contains a dosage (final sweetening composed of a wine and cane sugar solution) of 34g/l, though the sweetness is offset by a lively natural acidity. In combination with sweet food and in particular wedding cake, an ideal balance is attained.
This Champagne is the perfect pairing for foie gras, rich poultry in creamy sauces, Asian and spicy food as well as puddings and buttery or nutty deserts.
