Tasting Note

Raspberry and almond flower on the nose, combine with a citrus and honey baked apple on the palate, deliciously complex from over 4 years on yeast lees. Try with smoked trout; salmon canapés or freshly shucked oysters.


Made by director/winemaker Simon Day who grew up on an English vineyard and has 25 years’ experience making wine in England and abroad. Simon has recently established the first UK based vine nursery, providing vines to his viticultural clients, in addition to the million he has already had a hand in planting over the years.


Vineyard: located in Worcestershire, 8 acres, planted: 2007

Vines: Scott Henry trellis planted to density 1040 vines per acre

Soil type: Sandy loam over Devonian Red Sandstone

Harvest: Yield 3 tonne per acre. Handpicked.

Cépage: Pinot Noir 70% Seyval Blanc 30%

Fermentation & Production

Stainless steel, cool ferment (12- 15 Celsius), low intervention

Secondary fermentation in bottle - Traditional Method
