Bodegas Pinord is a family business which was founded 150 years ago. Since then, generation after generation, year after year, the wines produced by the family have been growing in prestige, the indigenous varieties have improved markedly, and the family name has become inseparably linked to the Penedés area where they are based. The Penedés district is situated between Barcelona and Tarragona, with the mountains of Montserrat marking the border in the north and the Mediterranean in the south. The soil is varied, contrasting from chalky clay to sandstone with distinct differences in depth so that the vines may take root. The mild Mediterranean climate is ideal for growing vines, indeed there is evidence that the Romans planted vineyards here. The slightly wetter weather in the valleys means that there is no need for irrigation.

Appearance

Pale straw yellow in colour. Brilliant appearance with constant release of fine bubbles forming a crown on the surface of the glass.

Aroma

It has the special aroma from the second fermentation in the bottle and evolution in the cellar. The second fermentation takes more than 48 months. Extremely fine and fresh. An aroma from the ageing process that gives it a personality of its own.

Taste

It still conserves the varietal flavours mingled with those of the ageing process to achieve a perfect balance. It is fine and elegant on the palate with a certain rejuvenating acidity producing a pleasant and extremely harmonious combination. A fairly long finish in the mouth.

Food and Wine pairing

Perfect as an aperitif or for a celebration but will team well with almost any food especially paella, chicken, cured meats, seafood and many fish dishes.

This wine is produced each year but in very small quantities and the DO controls over its production are extremely strict and not every batch of Cava Nature is able to be launched as a Brut Nature Cava.  The difference between Brut (widely seen) and Brut Nature is that the Nature comes from a single vintage and has not included the addition of sugar, added to Brut styles, in the dosage which is added after disgorgement.  This wine is more frequently drunk in Spain as it is not widely exported due to the small quantities in which it is made, but we have been fortunate in securing a limited supply of it through our strong relationship with Bodegas Pinord, which is lucky as it is our favourite style of Cava!
