Perez Cruz is a family owned boutique winery located in the Alto Maipo. Their estate covers 250 hectares of vines planted in one of the most sought after areas for growing premium Cabernet Sauvignon. This red wine specialist also produces small parcels of Syrah, Cot (Malbec), Carmenère and Petit Verdot. They also produce an elegant cool-climate Sauvignon Blanc from Casablanca. From the first vintage in 2002, Andres Perez Cruz has seen the estate's speciality red wine amass an impressive array of awards and gold medals. Their eco-friendly winery was built by award winning architect Jose Cruz Ovalle, to fulfil the technical objective of fine wine production. 2017 was generally a warm year, with a dry summer and high daily temperatures providing excellent conditions for the ripening and maturation of the grapes. The harvest produced average yields of high quality fruit, delivering good varietal typicity and flavour concentration, balanced by an attractive acidity.
The vineyard is located in the north eastern area of the Casablanca Valley and is situated on a slight, southerly incline. The Casablanca Valley is strongly influenced by the cooling effects of the Humboldt Current, which flows up the west coast of Chile from the Antarctic. Refreshing afternoon breezes from the Pacific Ocean create a cool climate which is ideal for producing elegant white wines. This cool climate results in a long ripening period, which encourages greater flavour complexity in the grapes while retaining a balancing acidity. The soils are deep and fertile with an abundance of clay within the soil profile, providing good water retention properties. The vineyard is cultivated using sustainable practices.
The grapes were harvested at optimum maturity and immediately pressed. The juice was separated from the solids using a cold static decantation method, which lasted for 24 hours. The must was fermented at cool temperatures of 12 to 13°C with selected yeasts for 20 days, in order to retain the freshness and purity of fruit. The wine was cool-settled for three days, before being gently prepared for bottling.
Refined and pure with aromatic citrus fruits, herbaceous notes complemented by a distinctive minerality. Intense and crisp, with juicy fruit leading to a refreshing finish.
Serve with grilled fish, seafood or ceviche. Also accompanies green salads with a tropical fruit element or seafood salad with a blue cheese dressing.
