Produced from the Soave DOC in the Veneto region in northeast Italy. Illasi forms part of the Soave production zone situated in the eastern part of the hills, some nine miles east of Verona, where the climate is influenced by the mists that flow from the Po Valley. The late ripening Garganega grape, which makes up half of this blend, is a late ripening variety with a thick skin, that can withstand the mist better than other varieties. The vines are grown in alluvial soils with fossils, imparting subtle mineral characteristics in the final wine.
The grapes were fermented in temperature controlled stainless steel tanks, preserving the aromatics and varietal flavour profiles of the local varieties in this unique blend.
Pairs beautifully with sage fettucine, pappardelle with zucchini and mint-parsley pesto, or a fresh salad with either tuna, salmon or prawns.
