When the oceans in the heavens became too warm then Mango (the shark), and Tuatara (the great lizard) came down to earth in search of cooler waters. It was then that Mango said to Tuatara, “Let us reside on land”.
They argued at length until Mango said to Tuatara: “Very well, remain on land to be loathed by all”.
Tuatara replied: “That will give me distinction, and I will thrive, but you will be hauled up with a hook in your mouth, cast into a canoe, and pounded with a fernroot- pounding mallet, after which you will be hung to dry like a wet rag”.

The almost extinct Tuatara, cousin of the dinosaur, is still to be found on Stephens Island in the Marlborough Sound, not far from Saint Clair’s vineyards, and gives its name to a pair of their fruit driven Sauvignon and Chardonnay wines which are ideal for serving by the glass.
Grapes: 100% Chardonnay
Vinification: Specially selected parcels of grapes from various clones, including Mendoza, clones 95 and 15 to add complexity and delicate fresh fruit flavours to the resulting wine. No sulphur was used prior to the press to minimise the extraction of harsh phenolics from the skins and the wine was cool fermented so as to retain the fruit flavours characteristic of the vineyards. Malolactic fermentation was then employed to add complexity and to help soften and round out the palate. Following completion of the malolactic fermentation, each component was assessed and the final blend balanced and the resulting wine prepared for bottling. Alc 13.4%, RS 3.5 g/l
Colour: Pale straw with gold highlights.
Tasting Note: This medium bodied wine has a soft round palate showing ripe melon and stone fruit flavours with subtle hints of peach leading to a full lingering finish. A fresh and fruity wine, this Chardonnay can be enjoyed either as an aperitif or with white meats, pasta and summer salads.
Serve: Great with rich seafood dishes,full flavoured white meats,grilled chicken and mushrom risotto.
