Producer Note
Named ‘Winery of the Year’ by James Halliday and Matt Skinner, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in paying meticulous attention to the vineyard, canopy and water management, picking at the right time and minimal intervention in the winery. Larry also makes wine under the Laissez Faire label, an exquisite range of natural wines which are the ultimate expression of site, made in small batches from hand harvested grapes. From delicate whites to opulent reds, all his wines have pure class and finesse.
Vintage
2016: From the Porongorup to Frankland, conditions were excellent throughout the season. The winter and spring lead-up were dry, which was eased by good rainfall during January. This brought much needed moisture for vine growth and yields. The whites have great verve and freshness.
Vineyard
Larry Cherubino believes the magic of wine is its ability to express its provenance. In the pursuit of excellence he travels the world searching for grape clones suited to specific vineyard sites. He also pays meticulous attention in the vineyard. Herbicides are not used; instead, at Larry Cherubino they make their own compost to support the whole vineyard biology, which maintains healthy soils with good levels of microbial activity. The philosophy followed by Larry and his team considers the whole ecosystem, resulting in healthier, disease resistant vines. The grapes are sourced from single vineyard sites in Channybearup, Riversdale, Justin and Acacia within the Frankland River region. The vines were planted in 1998 on their own rootstocks, in soils that are generally lateritic.
Winemaking
The grapes were harvested at night, then whole bunch pressed. Only the free run portion of the juice was used for this wine. Natural yeasts were utilised and the wine was bottled immediately after long, cool fermentation to ensure the vibrancy and freshness of the wine was captured.
Tasting Note
A light, straw-green wine with a purity to the bouquet. Layers of lime leaf and crystallised citrus notes lead to a thread of lime and mineral notes, which carry through to the finish.
Serving Suggestion
The perfect match for Gravlax.
