The Botti family has owned the 20 hectare vineyard for more than 80 years. The vineyard is situated in the southerly part of the Mâconnais in the heart of the Lamartinearea. St Véran is produced entirely from Chardonnay grapes and the vines are planted in clay and chalky soils and have a south easterly exposure.
Grapes: 100% Chardonnay.
Vinification: The approach to vinification is entirely traditional. The grapes are de-stemmed and pneumatically pressed. Fermentation takes place in temperature controlled tanks at 18°C in order to preserve the primary aromas. The wine is kept in stainless steel tanks until bottled.
Tasting Note: The wine is pale with green tinges and has mineral notes combined with creamy ripe fruit through to a crisp and clean finish. As the wine matures, it acquires an aroma of roasted almonds and honey.
Serve: At 11 to 13°C as an aperitif or to accompany hors d'oeuvres, cold meats, oysters and shellfish
