The Mellot family first made wine in 1513. Today the 18th and 19th generations of the family - both Alphonses control the business that has grown into an iconic winery. Much of the reputation comes from the work of Alphonse Senior who took control of the estate in the 1970s and began focusing on quality rather than volume. Alphonse Jnr is now taking over the reins from his father while the two current generations work together seamlessly making world-class wines on the 47 hectares estate which is largely farmed organically and biodynamically.
Biodynamic vineyard management. Vines are trained with Guyot or Royat Cordon methods. Vines are between 4 and 40 years old with an average yield of 53 hl/ha.
Grapes are picked in small 25 kg boxes and sorted in the winery. Whole grapes are transported into the press by conveyor belt. The grapes undergo sequential pneumatic pressing, followed by static settling at a temperature below 10°C for about 48 hours. Half the juice is fermented in vats and half in new casks at temperature between 18°C and 23°C. Ageing on the fine lees for 7 to 8 months.
At 10-12°C as an apéritif or 12 to 14°C to accompany oysters, shell fish and goat's cheese.
