Deep golden in colour, with aromatic notes of acacia flowers, citrus notes and ripe yellow fruits. Creamy and velvety on the palate with a refreshing finish.
San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.
The 2016 vintage was one of the longest lasting in recent years. Harvest of the white varietals began on 5th September and lasted until 20th. The grapes showed excellent aromas and a great balancing acidity, which was due to the fact that the temperature did not peak above 35°C during the summer period. The sugar levels reached were also excellent and with concentrated flavours which resulted in balanced wines with good structure.
The Nascetta grapes are grown in a single hectare vineyard in Novello, in the Ghercina area, where this variety originated. This perfumed variety is relatively low yielding, but produces high quality grapes with concentrated flavours. The grapes for this wine were grown on the banks of a small lake, which provides a unique microclimate in which this variety flourishes. The vines are manually harvested when the grapes have reached optimum maturity levels.
The grapes were gently pressed to extract the juice and fermented in temperature controlled stainless steel tanks to preserve the perfumed aromatic qualities of the Nascetta variety. The wine was aged for six months in used French oak, on its fine lees with ‘bâtonnage’ or lees stirring which gave the wine a fuller texture.
Serve as an apéritif or with antipasti, vegetable pasta dishes, sushi or shellfish.
