Salceto is a dynamic partnership between Cantine Monrubio and Gruppo Cevico, which is being headed up by one of Italy’s greatest winemakers Riccardo Cottarella. The two wines we have introduced showcase the distinctive Umbrian style.
2016 vintage saw a mild winter, followed by a moderate amount of snow. A wet, cold spring replenished the water reserves in the soils. The season turned into a beautiful and warm summer with a good day and night temperature shifts. Warm, dry weather in September and October enabled the grapes to reach good maturity levels, with concentrated fruit balanced by good acidity levels.
The inland DOC of Orvieto is located in the province of Terni, in south western Umbria. The vineyard is situated on western slopes in the heart of the Orvieto Classico region, where the climate is warm and dry. The warm days are tempered by cool nights which promotes a long ripening period, concentrating the flavours in the berries while retaining refreshing acidity. The vines are planted at a density of 4,000 to 5,000 vines per hectare, with Guyot or double-arch pruning. Integrated pest management principles are followed in the cultivation of the vineyard.
The Grechetto and Procanico (a synonym for Trebbiano) grapes were picked separately, crushed and macerated on the skins for 12 hours. A gentle pressing took place to extract only the best juice, which was settled overnight to let the solids settle. The juice was slowly fermented in stainless steel tanks with a selected yeast strain. The wine aged for six months on the lees in stainless steel tanks to retain the purity of the fruit in the blend.
Intense aromas of elderflower are complemented by a hint of tropical fruit. Crisp and refreshing with a subtle almond note on the dry finish.
A refreshing aperitif; serve with delicate fish dishes or pasta with a light sauce.
