Pouilly-Fuissé is an important wine appellation in the Mâconnais district of Burgundy. This appellation is restricted to the Chardonnay grape. The richest wines are said to come from Fuissé and Solutré. There is no concept of Premier Cru vineyards in this appellation, but Pouilly-Fuissé may be followed by the name of a specific vineyard.Domaine Ferrand is situated in the village Solutré-Pouilly in the heart of the Pouilly-Fuissé appellation of southern Burgundy. The domaine now comprises of just over 11 hectares of vineyards that have been passed down from father to son over three generations. Today the domaine is run by Madame Nadine Ferrand whose wines have been well reviewed by the Guide Hachette.
Grapes: Estate grown old vine ChardonnaySoil: Clay and Chalk Age of Vines: 50 to 60 years oldVinification: The grapes are pneumatically pressed and fermentation takes place in temperature controlled tanks. 30% of the wine is aged on its lees in new French oak casks where racking takes place once a week. The wine goes through malolactic fermentation. The wine is blended and filtered. Bottling takes place twice a year in April and September.Colour: Pale goldenServe: Chilled to accompany foie gras, lobster, fish and chicken in a cream sauce.Taste: Ripe fruit blended with oak, a round and creamy flavour with a nutty, toffee finish. A rich, complex and well balanced wine that will age well for up to 10 years from vintage.
