Tasting notes

The colour is a very light yellow. The nose is complex with ripe pineapple, passion fruit and mango. The palate is very elegant and fresh but complex with a lovely texture. This wine already drinks well but definitely has ageing capacity.

Producer note

Olifantsberg strive to make wines that reflect their unique location by focussing on hands-on viticulture that yields grapes that demands as little as possible intervention in the cellar. The estate vineyards are mostly dedicated to varieties that they believe can truly thrive under the very harsh conditions they experience. Their unique schist soils, constant winds and elevation combines to produce concentrated fruit that produces elegant, fresh and age-worthy wines.

Vineyard note

Vineyards were selected from a number of passionate growers that share their love for Chenin. Mostly old bush vines and younger blocks from unique sites were chosen to gain maximum layers of complexity.

Soil

A variety of soils ranging from granite, sand with clay fractions and schist.

Viticulture

Old bush vines with small yields and younger trellised blocks from unique sites.

Vinification

The wine was wild yeast fermented in one third 2000L foudres, one third seasoned barrels and one third stainless steel tanks. The wine was kept on the lees for 10 months before stabilization and bottling.
