The Dufouleur family have been merchants since 1596, but it was very recently that the new generation represented by Yvan & Yann decided to start distributing the family estate wines. Yann looks after the export markets; Yvan does the winemaking. The 33 hectares of vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin Clos du Chapitre Premier Cru.
The vineyards are farmed using sustainable farming methods, using natural organic products to protect the environment and preserve the characteristic of the soil and subsoil. The vines are grown in limestone-based soils and have an average age of 35 years. Trained according to the simple Guyot method, the vines undergo two annual tillings and a green harvest, which reduces the yields and concentrates the flavours in the grapes.
Total destemming was followed by a cold fermentation, which lasted for two weeks. After pressing, 20% of the wine was aged in oak barrels and underwent a malolactic fermentation. The remainder was aged in stainless steel vats, retaining the purity of the fruit.
Cool fermented with limited oak to emphasise the clean, fresh mineral flavours. The wine has a rich nose packed with pure fruits flavours through to a clean finish.
The perfect accompaniment to fine, rich fish such as turbot; or grilled veal with mushrooms.
