Vineyard
Vin de Pays de Comte Tolosan represents wines made in a large area of South West France. The region is situated in the Aquitaine Basin on plains that fall between the Pyrenees, the Massif Central the Atlantic Ocean to the west and the vineyards of Languedoc-Roussillon to the east. Much of the region is influenced by a maritime climate from the Atlantic Ocean, which delivers moderated summer and winter temperatures and high rainfall. Further inland, the climate is more Mediterranean, with warmer and drier conditions during the growing season. The vineyard sits on limestone soils.
Winemaking
The grapes were cool fermented in temperature controlled stainless steel tanks to retain the aromatics and purity of fruit. The wine was kept on fine lees for a several months under protective carbon dioxide to maintain optimum freshness. The wine did not go through malolactic fermentation, resulting in a fresh, crisp style.
Tasting Note
Citrus and tropical fruits on the nose combined with Sauvignon Blanc herbaceous notes. Well flavoured on the palate, with a round, fresh and zesty finish.
Serving Suggestion
Ideal as an apéritif or with seafood, grilled fish or goat's cheese.
