A full style of Chablis with notes of dried apricots and mineral tones on the finish.
As well as making sublime Champagnes, long-standing partner and friend François Moutard, along with his family, also make white Burgundy from grapes grown near the town of Tonnerre. These wines are noted for their minerality and purity of fruit.
Chablis is situated in Northern France, approximately 60 miles north of Burgundy’s Côte d’Or and consequently it has a cooler climate than the rest of Burgundy, with similar vineyard microclimates to Champagne. Moutard Diligent’s vineyard sits on Kimmeridgian soils, containing mineral-rich clay, as well as the essential marine fossils which are responsible for its significant lime content. Kimmeridgian soils are the source of the trademark minerality in Chablis wines. During the winter months, the vineyard was ploughed and fertilised using preparations from animal and plant origins. A green harvest took place at the end of May, to concentrate the flavours in the remaining berries. The grapes were harvested when they had reached optimum maturity in September.
A long fermentation in stainless steel, carefully controlled at low temperatures, ensured the development of more expressive aromas. The alcoholic fermentation was followed by malolactic fermentation.

A perfect accompaniment to trout with almonds, asparagus soufflé and shellfish.
