A spicy and flavoursome Chablis with a hint of lime and juniper on the saline finish.
As well as making sublime Champagnes, long-standing partner and friend François Moutard, along with his family, also make white Burgundy from grapes grown near the town of Tonnerre. These wines are noted for their minerality and purity of fruit.
The 2015 vintage started with very good conditions during flowering, with sunny and dry weather. The warm, dry weather continued throughout the growing season, helping to reduce disease pressure in the vineyards. The 2015 wines are showing excellent concentration, balance and richness, reminiscent of the 2005 vintage.
A blend of 1er Cru sites. The vines are grown on a steep and particularly sunny slope of the vineyards. Planted in Kimmeridgian soil, containing high levels of mineral rich clay and essential marine fossils, the lime rich soils are renowned for imparting minerality to the wine. The vineyard is ploughed and fertilised using preparations from animal and plant origins during the winter months. A green harvest takes place at the end of May, which enhances the quality of the grapes by concentrating the flavours in the berries. The harvest takes place in September when the grapes have reached optimal maturity.
The grapes were gently pressed in a gravity filled pneumatic press. The juice was then fermented in temperature controlled stainless steel tanks in order to preserve the freshness and integrity of the Chardonnay characteristics. Malolactic fermentation took place prior to maturation in oak, 25% of which was new. Clarification and filtration were carefully undertaken prior to bottling. The blend of the 1er Crus sites results in a beautiful balance between refreshing acidity from the 1er Cru Lechet vineyard and mellow fruits from the 1er Cru Fourchaume vineyard.
An elegant and pure 1er Cru Chablis, with delicate floral aromas complemented by refreshing grapefruit notes. A wonderful streak of minerality on the palate flows through to a long and stylish finish.
Enjoy with seared scallops, fleshy fish such as turbot, sea bass or monkfish; charcuterie or Brie.
