Tasting notes:
Nose: Attractive herb and tomato leaf with intense lime, grapefruit and passion fruit notes.
Palate:
Crisp and refreshing on the palate
Winemaking details:
The grapes were handpicked from a selection of Carmen's cooler vineyards in Casablanca Valley. The combination of soil, sun exposure, climate, as well as ripeness of the grapes, provides a great diversity of components to the final blend and produces the distinctive characteristics of this Reserva Sauvignon Blanc.
The must was cold macerated on the lees for 10 days at 3º - 4ºC. Fermentation was carried out in stainless steel tanks. Temperature was kept at an average of 12ºC, producing a low and gentle fermentation process. After fermentation was carried out, the wine remained on gross lees for up to 2 months. The wine was then racked, blended, gently fined and bottled.
