Overt aromas of minerality, fresh herbs and citrus jump from the glass. The palate shows lemon sherbet, juniper and fresh peas. The impression is one of complexity and power, yet the wine is immediately approachable and drinkable. The natural crunchy acidity is balanced by a soft textural mouth-feel. This wine shows great fruit intensity, persistence and length of flavour.
Named 'Winery of the Year' in James Halliday's 2011 Wine Companion, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in spending time in the vineyard, in paying attention to canopy and water management, and most importantly, picking at the right time with minimal interference in the winery. From delicate whites to big reds his wines have class and finesse.
Fruit was harvested at night followed by crushing and de-stemming. Some skin contact was employed to extract flavour and texture from the fruit. The juice was transferred with high solids into stainless steel tanks with 10% being put into new French oak barrels for fermentation. A selection of yeasts were used.
