Grapes: 100% Chardonnay
Viticulture: The temperate Mediterranean style climate, with warm days and cool nights, ensures the grapes obtain optimum maturity. Grapes were hand picked and carefully selected.
Vinification: Grapes picked at the optimum of their maturity. The fermentation took place in stainless steel tanks under controlled conditions, after a gentle pressing of the grape clusters. This wine has some adding of barrel fermented and has no malolactic fermentation in order to preserve the zesty character of the Chardonnay.
Nose/Taste: Ripe quince fruit, peach and grapefruit, some citric tones. Lightly toasted notes with influence of vanilla. Fruity, with notes of peach, ripe pink grapefruit. Fresh acidity, soft, long, fresh fine wine. Retro-taste balanced in acidity and alcohol.
Serve: This fresh Chardonnay may be drunk as an aperitif, at any time of the day, with some soft cheeses. It is also the perfect combination for citric cold entrees and seafood.
