Grape Variety: Pinot Noir
Method of preparation: The Pinot Noir grapes are harvested in early August using small boxes to minimize maceration. Once at the winery they are gently pressed and fermented in stainless steel at a low temperature. After the first fermentation, the second fermentation takes place in the bottle typical of the "Method Champenoise" and after a minimum of two years ageing, the wine is ready to drink. This wine is produced organically but not yet certified as such.
Appearance: Pale pink with hints of "onion skin." The little "pearl pink" (perles roses) rise slowly to form the characteristic mousse.
Aroma: The first impression is good with light aromas, showing persistent varietal character.
Taste: The palate is pleasant, full and creamy, with an elegant and very long aftertaste. It has great balance and a long finish.
Matching: Can be drunk at any time, as an aperitif or with all kinds of food, as it has the body to accompany food. It is also perfect for any celebration but especially for weddings and christenings.
The well known American wine taster, Robert Parker recently gave Naveran Perles Roses Cava, 91 out of 100, and he added the comment: Best Cava Rosado from Spain!
In our opinion, this is the closest Cava we have tasted to Rose Champagne at half the price!
