A white gold colour with abundant and fine bubbles Aromas of citrus fruits, white flowers and minerality. A very well balanced and versatile sparkling wine.
The Moutard family has been making wine since 1642. Since then they were always keen on exploring the potential of different terroirs, maintaining traditions as well as experimenting with different grapes varieties. Francois Moutard's 21 hectares vineyard are in Buxeuil on the Côte de Bar. Francois is one of the very few growers who can produce a Champagne - 6 Cépages - which is made up of the six permitted grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.
Chardonnay grapes from Chablis pruned vine trees, sourced from France regions including and mainly Burgundy.
Grapes are crushed in a traditional press. The first fermentation takes place in a stainless steel temperature controlled tank at 18 °C, the still wine is then bottled in May and the secondary fermentation takes place in the bottle according to the Méthode Traditionelle. The wine is aged for a minimum of a year, after which time the bottles are riddled. The dosage is 10g/l.
As an aperitif, complements a Kir Royal cocktail, whilst also pairs well with Indian cuisine, fish, poultry and desserts. Serve between 4 and 8 °C.
