With its attractive pale salmon colour, this cool climate rosé from this illustrious region of France is elegantly styled. Lifted red fruit aromas of wild berries follow through to a crisp, delicately fruity palate with a hint of minerality and an elegant long finish.
Brothers Yvon and Pascal Tabordet took over their 2.5 hectares of family vineyards in 1981, in the Verdigny district 3km from Sancerre. In 1988 they bought an additional eight hectares of vines in neighbouring Pouilly Fumé, on prime flinty slopes, making this the larger part of the estate. Yvon married primary school teacher Anne-Marie, and Pascal (by a stroke of efficient good fortune) married Anne-Marie's sister Marie-Laure, who now works full time with her husband and son. The estate is very much a family business, run in a traditional spirit, but with the latest winemaking technology.
The Pinot Noir vines are pruned following the Guyot method. A green harvest takes place at the end of August to regulate the number of grapes per vinestock. The grapes are then harvested between mid September and early October, once they have reached optimal ripeness. Located in the heart of Sancerre on the left bank of the Loire river, the vineyards have white argilo-calcareous soils and Caillottes, typical of the Sancerre appellation.
The grapes were carefully sorted and gently pressed in a pneumatic press. The must was lightly clarified, followed by a slow fermentation in thermostatically controlled stainless steel vats. The wine did not go through malolactic fermentation and was bottled young to retain freshness.
An elegant apéritif, also try with charcuterie, spicy dishes and summer salads.
