Short fermentation on the skins gives this modern-style Pinot Grigio a delicate pink-coppery colour, a crisp and intense aroma as well as a harmonious and fruity taste with notes of peach.

Cavit is a modern and forward-thinking co-operative group in the mountainous Trentino region of northeast Italy whose 11 cellars are responsible for a massive 65% of the region's wine production. In The Vineyard
The vines are largely trained using Pergola Trentina and Guyot systems, and grapes sourced from a region experiencing hot summers, and significant differences between day and night temperatures
In The Winery
Harvesting time is determined through monitoring the ripeness of the grapes. After selection, the grapes are destalked, crushed, and the must including skins, is cooled. After maceration the crushed grape mass is softly pressed using bladder presses.
