Wine maker, Constanza Schwarderer, concentrates on working in the vineyard in order to optimise the quality of the grapes produced. This is evident in these fruit-driven wines which show intense varietal character.
Variety: 100% Cabernet Sauvignon
Vinification: Grapes picked at the optimum of their maturity. The fermentation took place in stainless steel tanks under controlled conditions, for 15 days. An early separation from skins creates this red wine that is most forward, subtle and most of all, very fruity. Part of the blend was aged in French oak barrels.
Aroma/Tasting Notes Notes of ripe red fruits; strawberries, blackberries and a touch of vanilla. Good structure, with wild sweet tannins, very soft, well balanced;between acidity and alcohol, with notes of strawberry and blackberry.
Best enjoyed: This young Cabernet Sauvignon goes very well with stews, cheeses, white and red meats.
