Producer NoteThe Three Foxes is an artisanal winery set up in 2004 by three young dynamic South African friends, Chris Mullineux (of Mullineux Family Vineyards) and Oliver and Pascal Schildt. Making distinctive wines from the best parcels in the Swartland, they follow a minimum intervention approach in the winery. These exceptional wines are available in limited supply as only 2,000 bottles of each wine are produced.
Vintage2016 saw the smallest crop in half a decade, resulting in concentrated, ripe wines. The hot and dry conditions brought about an early harvest, which meant alcohollevels were generally lower than average, but the fruit was of very good quality.
VineyardThe Three Foxes spend a significant amount of time scouring the winelands, seeking out special parcels of vines and working closely with the grape growers. Thisapproach gives them the freedom to keep the sources fresh, dynamic and interesting, as they are not tied to specific vineyard plots, but quality is ensured by their interactive working relationship with the growers. The grapes are carefully sourced from some of the best vineyard sites in the Swartland region. Swartland covers an area of 40 miles north of Cape Town in the Western Cape. Within such a large area the topography and soil types are varied, with each terroir imparting its own characteristic to the final blend. The climate is hot and dry, with the lack of water producing low yields of small, concentrated berries.
WinemakingTo ensure the wine is a true expression of the vineyard sites, the vinification was minimalistic. The grapes were partially de-stemmed and fermentation took place naturally with a two week post-fermentation maceration. The vinification took place without the addition of yeasts, acids, enzymes or tannins and only minimal amounts of sulphur were added. The wine was pressed into used French oak barrels and aged for nine months. To preserve the true character of the wine, it was bottled without fining or filtration.
