Savoury, dry and full bodied; traditional in style but with modern nuances.
Based in Emilia-Romagna, Cevico is the second biggest Italian wine producer, representing 18 wineries and with over 6,700 hectares under vine. This is one of the most impressive companies making wine today. As well as the benefits of size, Cevico offer a myriad of small estates producing a bewildering array of wines, from both established and lesser-known appellations.
The Sangiovese grapes come from hillside vineyards near Rimini not far from the Adriatic Sea. The grapes were hand-harvested, de-stemmed, crushed and fermented with skins for 10 days at 25C. 80% of the wine was aged for 12 months in tank and the balance of 20% was aged in oak barrels for 12 months. The cuvees were then blended and left to rest in tank until bottled.
Roast red meats, game and mature cheeses.
