Umbria is a lush region of rolling hills located in central Italy. The climate is generally continental. The warm days are tempered by cool nights which promote a long ripening period, concentrating the flavours in the berries while retaining refreshing acidity. The soils are made up of tufaceous rocks with limestone. The vines are planted at a density of 4,000 to 5,000 vines per hectare and are trained on a spurred cordon system. Integrated pest management principles are followed in the cultivation of the vineyard.
The Merlot and Sangiovese grapes were picked separately, crushed and cold macerated for a period of 48 hours. Fermentation lasted for 12 days with daily pump- overs to extract colour and flavour from the skins. The wine underwent malolactic fermentation in concrete tanks, before being aged for six months in large oak vats.
