Dark berries with a hint of bitter almond. Ripe beef notes, oak and berry fruits. A beautifully concentrated wine that is multi layered, supple with a lingering and fine finish.
Marco Sartori is a driven young man. In a few short years he has gone from making his first vintage to one of the hottest new talents in the region. All the wines produced by this modern new winery are world class. Marco's philosophy is very simple, reduce the yields in the vineyard to 1Kg per vine and you obtain fabulous fruit concentration.
Grapes are dried until 1st week of December. Fermentation and maceration in tank for 30 days. When alcoholic fermentation is finished the juice is then transferred to French oak barriques (50% new) for 25 months. This is followed by 18 months in bottle prior to release.
To pair with traditional food from Veneto, Pasta with a strong tomato or truffle sauce, beef, game and stews such as steak, lamb, veal, rabbit, wild boar and deer.
