Oveja Negra Winemaker's Selection Cabernet Syrah 2017

The 2017 vintage saw temperate, dry conditions during the winter months of August and September. This resulted in early bud break, which caused poor shoot induction and ultimately lower yields. The summer was very warm and sunny, which encouraged healthy flowering and fruit set. Although the yields were lower than usual, the grapes were of very high quality and resulted in wines with excellent ripeness, tremendous depth, concentration and balance along with very good alcohol levels.
The grapes are grown in the Nilahue Vineyard, in Colchagua. The climate is Mediterranean with four well defined seasons and 600 millimetres of annual rainfall. The low humidity, the maritime influence of the Pacific Ocean, and the breezes from the Coastal Mountains generate a diurnal temperature difference of approximately 10°C; ideal for promoting a long ripening season, concentrating the flavours in the grapes, while retaining refreshing acidity. The vineyard sits on highly stratified hills with soils of alluvial origin, with a fine clay texture and rocks. The soil is low in organic matter and fertility.
The grapes were hand-picked. The fruit was then destemmed but not crushed to prevent excessive berry breakage and minimise astringency. A proportion of the Cabernet Sauvignon and all of the Syrah underwent a four to five day prefermentation cold soak at 10°C. Alcoholic fermentation lasted 25 days at a temperature of 28°C with three daily pump-overs depending on the density and oenological tastings. 40% of the final blend was aged in old French oak for 10 months. The wine was cold stabilised over the winter and filtered prior to bottling.
The 2017 Cabernet Sauvignon Syrah presents tremendous structure and an array of concentrated aromas ranging from wild red berried fruits from the Cabernet Sauvignon to blueberries, blackberries and floral notes from the Syrah. The firm, but smooth tannins create a good structure on the palate, with a pleasing creaminess, a brightening acidity and smooth, sweet notes on the finish.
