Aromas of black pepper, fynbos and grilled meat the nose. On the palate the wine is elegantly fresh yet structured with layers of spice and black fruits.
Olifantsberg strive to make wines that reflect their unique location by focussing on hands-on viticulture that yields grapes that demand as little intervention as possible in the cellar. The estate vineyards are mostly dedicated to varieties that they believe can truly thrive under the very harsh conditions they experience. Their unique schist soils, constant winds and elevation combines to produce concentrated fruit that produces elegant, fresh and age-worthy wines.
The soil on the estate is vertical schist that lends structure and freshness to the wines.

Canopy management is done to reach optimum ripeness without sunburn and over ripe flavours. Grapes are hand picked, sorted and stored in the cold room overnight. Grapes are 90% de-stemmed into wooden upright fermenters and a four day cold soak is carried out under CO2. Tanks are then heated to start the natural yeast fermentation. Punchdowns are done 3 times daily. A two week extended skin contact is given to soften tannins before pressing into mostly 300L barrels of which 20% were new. Malolactic fermentation is carried out in barrels and a total of 11 months maturation is given before bottling.
