Enticing strawberry fruit with hints of herbs typical of great Pinot Noir. The palate is silky with some complexity and depth whilst still retaining a lovely freshness.
The Dufouleur family have been merchants since 1596, but it was very recently that the new generation represented by Yvan & Yann decided to start distributing the family estate wines. Yann looks after the export markets; Yvan does the winemaking. The 33 hectares of vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin's" Clos du Chapitre " Premier Cru.
Simple Guyot trained vines. Vineyards farmed with sustainable farming methods (lutte raisonnée), with the use of natural organic products to protect the environment and preserve the characteristic of the soil and subsoil. Two annual tillings and green harvest to limit yields.
The grapes are totally or partially de-stemmed before undergoing pre-fermentation cold maceration to extract colour, tannins and aromas. The alcoholic fermentation lasts 10 - 15 days in an open tank with daily pigeage. The skins are gently pressed using a pneumatic membrane press and then the malolactic fermentation takes place in oak barrels. 12 months ageing in casks (one third new).
